Finger Lickin’ Good

I grew up in a house where we didn’t lick our fingers.  We didn’t smack.  And we never EVER belched at the table.  I’ve taught my kids the same.  Mostly because I cook so much for other people, but also because it drives me nuts.  Maybe I’m a little OCD?  But, it creeps me out to watch people lick their fingers while they’re cooking or pick their teeth at the table.  However, there is one thing that causes me to forget all of my kitchen and table manners.  I must admit that every time I make this I have to scrape the bowl clean and might even let out a tiny belch of happiness when I’m done.  That thing is oatmeal cookie dough (minus the raisins).  Just typing the words makes me salivate.  There are a lot of wonderful oatmeal cookie recipes out there, but this is my favorite:

SPICY OATMEAL & PECAN COOKIES

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned oats
  • 1 1/2 cups all-purpose flour
  • 2 tsp. pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup chopped pecans
  1. In large bowl, cream shortening and sugars. Beat in eggs and vanilla. Combine the oats, flour, pumpkin pie spice, baking soda and salt; gradually add to creamed mixture. Stir in pecans.
  2. Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375 degrees F for 10-12 minutes or until golden brown. Remove to wire racks to cool.

BE SURE TO OMIT THE EGGS IF YOU’RE GOING TO EAT IT UNCOOKED LIKE I DO!  🙂  ENJOY!
